There are a so many cute and green Saint Patrick’s Day recipes out there, but what about something that’s focused on flavor and tradition? This corned beef burger topped with Veggie Sticks is a hearty, Irish-inspired meal sure to keep you full and ready to go on a day of Irish heritage celebration!
Ingredients
Bacon
1 1/2 pounds corned beef
1 onion
1 cup beef broth
2 teaspoons Worcestershire sauce
2 teaspoons grainy mustard
Sliced cheese
Eggs
Brioche buns
Eatsmart Veggie Sticks
Serves: About two, if making large patties
Cook the bacon until it is crispy. While the bacon cooks, grind the corned beef in a food processor or meat grinder. Form the ground meat into large patties. Use a little salt and a lot of pepper to flavor.
If the corned beef does not stick together, you can use a little whisked eggs on your hands. Some Veggie Sticks bread crumbs mixed into the meat will help too. Just don’t use so much egg that it makes the patties too wet.
Heat the oil on a skillet, and sauté sliced onions. Once they soften, pour in the beef broth and let it simmer until the liquid has evaporated. Turn off the heat and whisk in the Worcestershire sauce with mustard.
Fry an egg for each burger and set them to the side.
Fry the patties over medium high heat until they are cooked on each side. Add a slice of cheese on top, then pour the water onto the pan. The water will help the cheese to melt. Remove the burgers from the stove.
Top the burgers with eggs, bacon, onion, and Eatsmart Veggie Sticks. We used green and orange ones to match the holiday!
